Sherry comes from the province of Cadiz in Andalusia, Spain. Cadiz is located between the cities of Jerez de la Frontera (which is where the name of this wine comes from) and Puerto de Santa Maria. More than 90 percent of the vineyards are planted with the Palomino grape. The other two sherry grapes are Pedro Ximenez and Muscat. These are mainly used to make the sherries sweeter. The Pedro Ximenez sherry was vinified from the sun-ripened grapes of this grape variety. The grapes are harvested late in September so that they build up a high sugar content and can be used to make a wonderfully sweet sherry.
Intense and dark brown in color with aromas of nuts, raisins, figs, dates, chocolate and mocha. Particularly intensely sweet in taste. A wine for real sweet tooths with dates and raisins, but also a very good balance of bitter substances and acids.
A perfect dessert wine, good with strong, sweet desserts, nut cakes and chocolate.
