The Cottanera vineyards are located right at the foot of Mount Etna, where the soil is made up of weathered volcanic rock and has an incredible concentration of minerals. This leaves its mark on the wines, which are characterized by a complex fruit and mineral character. The grapes are harvested by hand and, after pressing, fermented in stainless steel tanks, where the Barbaz - zale remains on the lees for about six months.
