Restrained orange. The "Unterirdisch" is made from the rare grape variety Roter Gutedel and is fermented completely on the skins in the style of an orange wine. Matured without any intervention for a year in an amphora buried in the vineyard, then pressed and further matured in barriques. Orange-reddish appearance, deep and rich bouquet. Vegetal, yeasty, earthy-floral and nutty notes. Tannin grip on the tongue, but crumbly tannin without leaving a fur on the tongue. Very firm, tart, cool finish with light citrus, herbal and spicy tones, plenty of grip and a fine bite. Aging potential for at least 10 years.
Soil and microclimate: Jurassic limestone
Vinification: Foot maceration in the vineyard, spontaneous fermentation of the entire berries in an amphora buried in the vineyard, aging for 12 months in the amphora, then pressing and further aging for at least 12 months in barriques, bottling without additional sulphurization, fining or filtration.
Wood used: used barrique
Note: Since the wine is bottled without any additional sulphur, we add a small amount of barrel yeast to the bottle for permanent stabilisation. Therefore, decant if you want a clear wine, but we recommend shaking up the yeast before serving.
