The vines of our TEPHRIT wines grow on the west side of the Kaiserstuhl on the cooled lava that was thrown out of the craters of the volcano 16 million years ago. The barren soils are a constant challenge for the vines, especially in the dry summer months. This forces the vines to adapt and naturally ensures a low yield level and even ripening of the grapes.
The grapes were harvested by hand in September and carefully sorted. After a gentle pressing, the musts obtained were clarified only by gravity. The wines were fermented spontaneously with the natural yeasts from the vineyards. The wines then matured on the lees for 10 months in both used barriques and large wooden barrels (1200l).
