The development of Hallgarten and its wine-growing is undoubtedly linked to the proximity of the Cistercian monastery of Eberbach. The monks probably assumed that the vineyard belonged to the Virgin Mary because of the high esteem in which the crescents grew in their Hallgarten vineyard and named this vineyard "Jungfer". A clear sign of the veneration of the Virgin Mary in the Middle Ages.
Until the middle of the 20th century, the area of this highly valued vineyard was only a few hectares in size. Sloping towards the south to southwest, these vineyards enjoy the warmth of the midday sun. The high proportion of quartzite in the soil absorbs this heat during the day and releases it to the vines at night. This is also the decisive factor for the high minerality of the wines from the original parts and the adjacent vineyards of the "Jungfer" and their great storability.
The grapes for this wine were harvested at the end of September to the beginning of October. They were golden yellow and ripe, some were overripe and had a small amount of raisins.
They come from thinned plots of the original virgin vineyards, are pressed directly after harvest, fermented in stainless steel and left on the fine yeast until February.

Very succulent and concentrated with super bright acidity that interlocks beautifully. At the very mineral finish it's almost dry. From organically grown grapes. Drink or hold.
