The harvested grapes were brought to the cellar, de-stemmed and crushed. Maceration takes place over a period of 8 days at a maximum temperature of 28°C. Both alcoholic and malolactic fermentation are completed before winter. Fiulot aged for several months in stainless steel tanks before being bottled in spring. "Fiulot" comes from the Piedmontese dialect and means "young man". This Barbera is delicate and easy to drink, a youthful expression of its fruit and aromas.
