Cépages: 40% Roussane, 40% Marsanne, 20% Grenache blanc.

Terroir: Commune de RASTEAU, the vignes are located at altitude, at 250m. Terroir de coteaux aux sols argilo-calcaires caillouteux et pentus.

Viticulture: The sole is worked and integrated in the respect of the environment and the plant.

Vinification: Récolte manuale, tôt le matin, égrappage puis pressurage à froid with a pneumatic press and elimination of the dernières presses. Débourbage with fermentation at température régulée (15° C).

Annual production: 8,000 bottles.
Accords: Fromage frais de brebis and sa gelée de melon au fenouil, Saint Jacques snackées et jus de citron vert, Crustacés, sable façon tarte à l'abricot et rhubarbe, clafoutis aux pèches à la menthe et romarin.
