The hand-picked organic grapes for Preisinger's Blaufränkisch come from various locations at the northern end of Lake Neusiedl. The soils in these locations are made of fossil limestone and limestone sandstone, which are shaped by the primordial sea. The grapes are harvested by hand in October. After a pre-selection in the vineyard, the grapes are sorted again in the winery to ensure that only the best grapes are processed. Fermentation begins spontaneously in the tank. After fermentation, the red wine is then aged for eight months on its own yeast in oak barrels to give it a fine wood note.
