Colour: light, shiny straw yellow with greenish reflections. Scent: fragrant, slightly grassy bouquet with fresh aromas of gooseberries, fresh herbs, citrus fruits (lime, grapefruit, lemon peel), cassis blossoms, also delicate exotic notes and a hint of fennel. Taste: very juicy, with animating freshness, racy acidity and fine minerality, the fragrant aromas of the bouquet can also be felt on the palate, finely wrapped in the slightly creamy texture that the short yeast storage gives it, full-bodied with a beautiful balance of fullness, fruit and freshness, elegant in the finish with the delicate bitter note characteristic of Verdejo.

Serving suggestion: refreshing as an aperitif or with fish and seafood (trout tartare, scallops), green salad with chicken, fennel, asparagus, fresh sugar snap peas or green beans (only briefly blanched and tossed in butter with fleur de sel), with many dishes of Asian cuisine (with lemongrass) and mild goat cheese
