Extra-Brut Rosé is only produced in years with very good quality black grape varieties. The Rosé d'Assemblage process is unique in that it allows a white champagne to be harmonized with a small amount of red wine from Champagne, which comes from the Grand Cru village of Mailly. Each harvest brings different structures and color intensities. The possibility of working with the addition of red wine makes it possible to be more stable and precise in color. Ployez-Jacquemart red wines are aged in oak barrels, which gives them an elegant, slightly woody note. We use only a very small dosage so that the fruit and aromas of the wine can fully develop.
