The Riesling Sekt brut appears in the glass with a light lime green color. The nose has clear notes of lemon and floral freshness. On the palate, these aromas continue with green apple and a light yeast note, due to the long yeast storage. This sparkling wine impresses with a beautiful melt and long, slender acidity in the finish.

All of Balthasar Ress' sparkling wines are produced using the traditional bottle fermentation method, as is the case with champagne. The base wine is filled into the bottle together with the tirage, a mixture of yeast and sugar, and then tightly sealed. The yeast then begins to react with the sugar and a second fermentation takes place in the bottle. This produces carbon dioxide, which cannot escape due to the tight seal. After 15 months of yeast storage, the bottle is gradually tilted further so that the yeast settles in the neck of the bottle. The yeast plug is then frozen and the bottle opened. The pressure in the bottle causes the yeast to shoot out of the bottle, leaving behind a clear sparkling wine, which is then refilled with the dosage. The dosage ultimately determines the sugar content and the final taste of the sparkling wine.
