2022 Steenberg Chardonnay

The grapes are gently pressed (whole bunch pressing) after harvesting, rested overnight and then deposited in stainless steel tanks. Half of the grapes are fermented naturally in older large French oak barrels, while the rest of the juice is mixed with natural yeast and fermented in new 225-litre French oak barrels and stainless steel tanks. Fermentation and aging in barrels lasts a total of four months. Partial malolactic fermentation took place in barrels. Finally, the wine is transferred to stainless steel tanks, blended and prepared for bottling.
The Sphynx Chardonnay displays intense aromas of limestone, orange blossom, butterscotch and crème brûlée. Subtle vanilla aromas mingle with pear and dried apple flavors on the nose and in the mouth. It is complemented by a silky, elegant structure and creamy texture, which in turn is tempered by clean acidity and chalky minerality.
