Winemaking: The harvest takes place only at night to protect the grapes as much as possible from oxidation. The grapes are harvested when they are fully ripe. The grapes are then macerated for two weeks, during which they are dropped and pumped over before being unwrapped. The juices are then subjected to malolactic fermentation and aged under micro-oxygenation.
Tasting notes: This wine has a garnet red color, a nose that reveals aromas of plum, myrtle and cooked berries. The palate is greedy, well balanced. The aromas of fresh harvests give rise to a fleshy palate of long duration, accompanied by very soft tannins. This wine is particularly appreciated as an accompaniment to grilled red meats, cold cuts and figatellu.
Serving temperature: 14-16 degrees.
