This cuvée was born in 1987 from the desire to isolate the finest Mourvédre from the domaine, but without damaging the domaine's red wine. Saint Ferréol is only produced when the classic cuvée has a good balance on its own.
Somewhat spiritual by its name, sometimes impenetrable by its color, Saint Ferréol is a tribute to this grape variety, both ubiquitous (90% in this wine) and so difficult to define, and to our small country made up of mixed soil types. Introspective, rigorous, straightforward, the spicy, peppery palate leaves a mineral imprint reminiscent of our stoneware. Tobacco, truffle and lily mingle with the spicy note of Carrignan. The contribution of Carrignan opens the wine and makes it more brilliant in its dark retreat.
For the record, the choice of name was made at random, it turns out that this religious military saint was expelled from his order for being too strict. The verticality of the wine combines with that of the vine and this saint who would have ended his life on a stake… Mourvèdre, a Spanish grape variety, also behaves like a bull, its horns in the air and its feet deep in the earth.
He demands blood in his agreements with a court. A serrano with a hint of Sichuan pepper definitely suits him.
Mourvèdre 85%; Carrignan 15% - Serve at 16°. Open a few hours in advance or even the day before.
