2022 Ximomavro Hedgehog

This wine is made entirely from the indigenous grape variety Xinomavro, with the emphasis on 'no'. All the grapes were harvested by hand at an altitude of 690 meters, in a region with significant temperature differences between day and night. This greatly benefits the ripening and the development of the aromas. The Xinomavro grape is a clone of Nebbiolo and is also related to Pinot Noir. This is not surprising, as the Florina region is on the same latitude as Burgundy and Piedmont.

The wine has undergone 12 months of barrel aging in partly new barrels, followed by a further 12 months of bottle aging.
