Sauternes is the world's most famous production area for noble sweet white wines. These wines owe their high residual sugar content to the so-called noble rot. It takes a bit of skill to explain this precisely: the cold water of the Ciron, which flows into the warmer water of the Garonne, creates morning mist in the autumn, which remains on the slopes. This makes the grapes moist and, under ideal conditions, a small fungus, botritis cinerea, clings to the grapes. The grapes infected by this fungus dry out and lose up to 50% of their water volume very quickly. The amount of acids and sugar remains high, however, so that the grapes have a relatively high concentration. A good noble sweet wine is therefore very sweet, but also lively and elegant, and not clumsy and sticky. The grapes are harvested by hand and several times, because the grapes are not all infected by the fungus at the same time.
It is a very rich and aromatic wine with nuances of honey, vanilla, peach, almond, apricot and candied fruit.
This wine goes perfectly with white meat and poultry.
