grape varieties/vinification
The grapes are harvested by hand when they are perfectly ripe and vinified individually to best respect the particularities of each characteristic variety. After a gentle and delicate pressing, the grapes undergo a cold maceration of 12 hours and are immediately pressed. Pecorino ferments in large, unroasted 50hl barrels, Fiano and Grillo ferment in stainless steel containers.
tasting note
Offers a complex bouquet with notes of exotic and intriguing fruits such as mango, papaya, lime and red grapefruit combined with scents of herbs such as lemongrass, lemon balm, mint and green tea. A white wine with a long finish, rich in nuances.
wine/gastronomy
Perfect as an aperitif in combination with ham and cheese, fine creams and soups, raw shellfish and all kinds of fish.
