This wine is made from 100% Vermentino. Vermentino, also called "Rolle", is a grape variety that thrives in the Languedoc climate. The grapes are harvested partly by hand and partly mechanically. Nitrogen gas is used during the fermentation process to prevent oxidation. The wine matures on the lees for two months in stainless steel tanks.
Typical aperitif wine: fresh, dry on the palate with citrus fruits (lemon, grapefruit) and mango. Lively and deliciously spicy. Pleasantly round on the finish. Fine straw yellow color. Aromas of white fruits. Fresh, well-integrated acidity. Full, fleshy, but also mild wine. Vermentino is also often called Rolle. A good example of the new, modern wines that are currently coming from Vin de Pays d'Oc.
The best serving temperature is 12 °C and this wine can be drunk with seafood, risotto and salads.
