Corvina Veronese and Corvinone Veronese 70%, Rondinella 30%. Hand-picked and selected the best grapes at the end of September. Perfect grapes, very healthy, with high sugar content.

Withering for about 100 days from the end of September, with a natural weight loss of 35-40%. The integrity of the bunches and the health of the grapes are checked with the utmost care.
vinification.
Gentle pressing of the dried grapes in December/January. Fermentation at controlled temperature and maceration for 30 days.
sophistication.
The resulting wine is aged for 18 months in new medium-toasted Allier oak barrels; the wine is bottled for 6 months. Tasting notes: Deep ruby red colour with garnet veins. Ethereal, fragrant, spicy bouquet with hints of cherry, bitter almond and vanilla. Full flavour, warm, velvety, soft, on a pleasantly bitter background.
