The biodynamic grapes come from several vineyards, which are both stony and gravelly and also chalky in different sections. This gives the grapes an incredible variety of aromas and led directly to the apt name :-
Hand-picked, four days of maceration (on the berries), pressing, fermentation in various wooden barrels (a mix of large and small). After half a year, filled and left to rest in the bottle. Bottled unfiltered and unsulphured.
A hint of dried fruit, ripe pear fruit, mineral touch, fine notes of meadow herbs and walnut. Firm, salty, ripe yellow apple note, delicate sherry note on the finish, persistent, saline aftertaste.
45% WB 15% GV, 5% Muscat, 5% Welsch
