Part of the grapes for this wine are dried before the grapes are pressed. This method is called the "appassimento" method. It is a unique method that is characteristic of the wine production of the Veneto region. The origin of this technique dates back to a distant past: the Roman period. It requires the necessary experience for drying Neropasso grapes. The appassimento method is essential for an excellent wine. It is a very critical and delicate phase during the wine production process.
There must be perfect and healthy grape ripeness when the grapes are selected during the manual harvest. Only the slenderest grapes are selected because the grapes are not too close to each other so that air can circulate. The grapes are then placed in large, perforated plastic boxes. This ensures optimal ventilation. The boxes are then stacked in the "fruttaio" - a large, airy room. The grapes are checked regularly so that the appassimento takes place in exactly the right way.
This wine has an intense ruby red color. Spicy in the bouquet, with hints of black cherries and plum compote. Fine and silky on the palate, with sweet tannins on the finish.
