Selected vines, at an altitude of 300-600 m above sea level, Guyot-trained, on clayey soil; limited yield per hectare. The Frappato grapes are harvested as soon as they are ripe, so the typical freshness is retained in the must. Most of these are slowly fermented in smaller steel containers. The Nero d'Avola grapes are harvested late, however. This causes the berries to dry out slightly (late harvest type). The carefully picked grapes are placed in wooden boxes and then gently pressed. Fermentation then takes place at a controlled temperature. The two musts obtained are then mixed at the right time and in the right proportions, according to the careful discretion of our cellar master. Profiling by means of cold treatment If fermentation is stopped, a natural residual sweetness is retained. The wine matures for several months in stainless steel tanks.
