Vines in the south of the appellation on the village of Mercurol, from the Lieu-dit Malfondières. "Les Rousses" is not a district but a normal cuvee
Soils: Glacio-fluvial alluvium
Grape variety: Marsanne
Viticulture: high-density planting (8,000-10,000 vines per hectares). Natural cover cropping to avoid erosion. No insecticides with respect of soil and vine balance, few treatments (depending on weather and the necessary) and small amount of organic fertilizer. Vigour and yield control, leaf-thinning and green harvesting to promote grape ripening. Disbudding on the spring
Vinification: Plot harvest and vinification. The grapes are picked when fully ripe and hand-sorted. After pressing, they are alcoholic with native yeasts and then malolactic fermented in barrels and big cask with temperatures control.
Olfactory Tasting: Fresh and charming wine. Pleasant fruity nose and fluttering aromas (peach, apricot), citronnella, hints of almonds and white flowers.
Tasting: Delicious on the palate, well balanced between sweetness and freshness
Aging: Drink "on the fruit" up to 3-4 years.
Accord : Serve on aperitif or fish. Cod fillet with candied tomatoes and lemon sauce.
