The whole bunches ferment in rotating barrels and then soak for 2 more days. After fermentation, half of the skins are removed. The whole thing is then pumped into barrels to continue fermenting. The wine then ages for another 12 to 15 months in French oak barrels that are used for the second or even third time.
This Pinotage goes perfectly with hearty meat dishes such as roasts or grilled meat on the “braai” with a sweet barbecue sauce. But the wine is also a real delight with slightly spicy dishes.
