Falstaff 94 points: Light green-yellow, silver reflections, lively, persistent mousse. A hint of yellow stone fruit, delicate Golden Delicious apple, candied mandarin zest, fine blossom honey, notes of nougat. Juicy, white apple, fine acidity, rich in finesse and very long-lasting, a great food accompaniment with definite aging potential.

Grape varieties: Grüner Veltliner, Welschriesling, Chardonnay
Aging: large wooden barrel, bottle fermentation

The base wine for the Blanc de Blancs comes from surrounding vineyards and is a cuvée made from the Chardonnay, Welschriesling and Grüner Veltliner grape varieties. The grapes are harvested at the right time in small boxes and pressed immediately, but only the heart is used for the base wine. After 6 months of barrel storage, it is bottled for the second fermentation. It then rests on the yeast, which contributes to the creamy texture, for 3 years before being riddled by hand and disgorged.
