The Sparkling Sauvignon Blanc is made in the traditional way, harvested by hand and carefully pressed with the whole grape under low pressure so that it does not lose its bitter substances. The juice is left to settle overnight before fermentation. Fermentation takes place at low temperatures in stainless steel tanks and lasts three weeks. After the first fermentation, the wine is stabilized and prepared for the second fermentation in the bottle. The secondary fermentation in the bottle lasts three months.

The nose is bursting with intense aromas of passion fruit, melon and a hint of lime. The palate is light and soft with a pleasant acidity that highlights tropical flavors such as pineapple, pear and guava.
