This exquisite Cava is composed of a blend of various grape varieties: Macabeo, Xarel.lo, Chardonnay, and Parellada. Each grape variety is handpicked and fermented separately, with the harvest being done mechanically. After the first fermentation of 12 days at a temperature between 14-16°C, the second fermentation takes place in the bottle for a minimum of 15 months in the cellar. It presents a pale yellow color with fine bubbles and a perfect mousse. The bouquet offers aromas of yeast with a fruity base of ripe apples, bananas, and pineapples. It has a delicate presence in the mouth, initially sweet but well balanced, fresh, elegant, and full of character. This Cava is perfect as an aperitif, but also pairs wonderfully with heart scallops, shellfish, prawns, and a variety of fried dishes.
